Casas del Bosque La Cantera Sauvignon Blanc

Juan Cúneo Solari founded Casas del Bosque in 1993, at a time when the Chilean wine industry was pursuing quantity over quality.

La Cantera was born with the 2019 harvest and became part of the Botanic Series family. It is a Sauvignon Blanc that represents the maximum aromatic expression of Casablanca as envisioned by New Zealand consultant Sam Harrop MW. Its grapes come from the “La Cantera” barracks planted on a slope of red clay of decomposed granite, facing east, very exposed to the sun and the sea breezes characteristic of the Casablanca Valley.

APPEARANCE
Pale straw in color.

NOSE
The aromas are very expressive and cover the entire range from boxwood to grapefruit and passion fruit.

PALATE
In the mouth it is a fresh and light wine, standing out for its minerality, volume and persistence.

VINIFICATION
After fermentation, the young wine was left on its lees for one month, without stirring, before assembly.

PAIRING
Ideally between 6 and 8 ºC, with shellfish such as oysters or grilled fish. Herbs like chives, coriander, or parsley. Green olives, chutney and all kinds of goat cheeses.
