Jean Pabiot et Fils Kimeridé Pouilly-Fumé

Son and grandson of Jean Pabiot, Alain and Jérôme manage the Domaine des Fines Caillottes within the Pouilly-Fumé appellation. The terroirs, mainly clay limestone, are therefore very varied: white limestone pebbles known as “caillottes”, marl with small fossilized oysters (kimmeridgian) and flint. This diversity of terroirs gives the estate’s wines their aromatic complexity.
“Kiméride” comes from Kimmeridgien, time of the geological formation of this terroir. This cuvée, produced only with the best vintages, is a plot selection of this Kimmeridgian limestone terroir, with fossils (ammonites, small oysters, etc.).

The vineyards are sustainably managed, certified TERRA VITIS and High Environmental Value.

TECHNICAL DATA

APPEARANCE
Intense straw yellow.

NOSE
The nose reveleas a remarkable olfactory complexity where floral notes (honeysuckle, acacia) are followed by honeyed nuances on a chalky and lemony background.

PALATE
Ample and dense, the mouth develops in a round and smooth texture.
Its long finish confirms the delicacy of the aromatic palette.
High class Pouilly-Fumé.

AGEING
Ageing in stainless steel tanks on fine lees for several months with reassembly of these lees. Bottling after 2 years of ageing.

PAIRING
Fully appreciated as an aperitif, it goes wonderfully with crustaceans, fish, poultry, rabbit, veal, stew and tender cheeses.

READINESS FOR DRINKING
Ready to drink upon purchase, it can easily be stored for 7-8 years.
